Easy Steps
01In a deep bowl or mud pot, mix the cooled cooked rice, curd, water, and hot milk. Stir gently until combined.
02Add the sliced onion, chopped green chillies, and salt to taste and mix everything well.
03Cover the bowl and let it sit at room temperature for 7–8 hours (or overnight) to allow light fermentation.
04For tempering (tadka), heat 1 tsp ghee in a small pan and add cumin seeds and let it splutter. Add curry leaves and fry for a few seconds.
05Pour the tempering over the fermented ganji mixture and mix well.
- 1 cup cooked rice (cooled)
- 2 tbsp curd (fresh and thick)
- ½ cup water
- ¼ cup hot milk
- 1 small onion, finely sliced
- 1–2 green chillies, chopped
- Salt to taste
For Tempering:
- 1 tsp ghee
- ½ tsp cumin seeds (jeera)
- 5- 6 curry leaves
