Easy Steps
01Roast 3 medium tomatoes and 4-5 garlic cloves directly over an open flame (or in an oven at 220°C for 12-15 minutes) until they are charred and soft.
02Let the mixture cool slightly, then peel most of the charred skin from the tomatoes and garlic. Mash the tomatoes and garlic together.
03Mix in 1 small finely chopped onion, 1-2 chopped green chillies, a handful of chopped coriander, and salt to taste.
04Finish with 1-2 tbsp mustard oil for the signature smoky punch. Serve immediately.
